More of Sharon's Recipes

Light Banana Bread


1 ½ c. flour
½ tsp. baking soda
½ tsp cinnamon
¼ tsp baking powder
¼ tsp nutmeg
1/8 tsp salt
2 egg whites
1 c. sugar
1 c. mashed bananas
¼ c. cooking oil
½ c. currants (optional)
Preheat oven to 350˚. Stir together flour, baking soda, cinnamon, baking powder, nutmeg, and salt. In mixing bowl, beat together egg whites sugar and banana. Add oil and mix well. Stir flour mixture into banana mixture. Gently fold in currants. Spray 8x4x2 inch pan with cooking spray. Pour in mixture. Bake 50- 60 minutes. Cool 10 minutes in pan.



Peach Cobbler

1 bottle peaches
2 ½ Tablespoons cornstarch
¼ tsp. nutmeg
1 Tablespoon butter
1 Tablespoon lemon juice
Combine and cook, stirring continually, in saucepan until thick. Pour into 9x13 pan.

Topping:
1 egg
½ shortening
1 c. flour
1c. sugar
½ c. milk
1 tsp. baking powder
Combine mix until smooth. Pour over fruit mixture.
Bake at 375˚ for 20-30 minutes.


One Bowl Brownies

1 ½ c. flour
2 c. sugar
7-8 Tablespoons cocoa
1 tsp. salt
2 tsp. vanilla
4 eggs
1 c. nuts
1 c. oil
Preheat oven to 350˚. Mix with a wooden spoon for 3 minutes. Bake for 20-30 minutes in greased pan.

Pizza Crust

1 c. warm water
1 Tablespoon yeast
2 Tablespoons olive oil
1 tsp. salt
½ tsp. sugar
3 c. flour (½ whole wheat)
Mix water, yeast, oil, salt, sugar, and 1 ½ c. flour. Add remaining flour and knead until smooth.
